Key Allergens at RaRa

Learning Objective: Know Australia's mandatory declarable allergens, understand where they hide in RaRa's specific menu items, learn to use both the NAC and RaRa allergen matrices, and know the key distinctions (peanut vs tree nut, crustacean vs mollusc).

Australia's Mandatory Declarable Allergens

These foods cause 90% of allergic reactions in Australia. As FOH staff, you must know them and be able to identify them on the RaRa menu.

Where Allergens Hide on the RaRa Menu

Ramen is a high-risk cuisine — a single bowl can contain multiple allergens. Here are the RaRa-specific details you must know:

Hidden Allergens at RaRa Watch out for: sesame in chilli oil and black garlic oil, oyster sauce in most ramens, mackerel powder in mazesoba, niboshi in the Tokyo-Style Chintan, and parmesan in the Truffle Karaage Mazesoba. When in doubt, check the allergen matrix.

These distinctions matter because they affect which dishes you can safely recommend:

Peanuts vs Tree Nuts

Peanuts and tree nuts are different allergens. A guest allergic to peanuts only may be safe with tree nuts (and vice versa). At RaRa:

Gluten is one of the most common allergen requests. At RaRa, standard noodles and soy sauce contain wheat. Here are the safe alternatives:

Using the Allergen Matrices

RaRa has two allergen matrices and you must know both:

If you're unsure about modifications, ask the chef directly. Apply the 100% Rule.
Know Where They Are You must know exactly where both matrices are located at your store — whether at the POS, on the wall, or in a folder. If you can't find them during service, that's a problem. The QR ordering system also lists allergens on menu items.

Tricky Guest Situations

Scenario: "I'm allergic to soy"

A guest declares a soy allergy. At RaRa, this is extremely challenging because soy sauce (Shoyu tare) is in most broths, marinades, and tare. You must check the allergen matrix carefully and be honest with the guest about which dishes can be safely modified and which cannot. Never promise a soy-free dish you can't guarantee.

Scenario: "Is the tonkotsu ramen fish-free?"

Never assume. Even though tonkotsu is pork-based, the broth may contain dashi, fish sauce, or bonito. Check the allergen matrix and confirm with the kitchen if needed.

Scenario: "I have a nut allergy but only to peanuts"

Ask: "Is it just peanuts, or all nuts?" If peanut-only, the gyoza may be safe (processed in a nut factory but no peanuts — check with the chef). The Chicken Tantanmen is NOT safe as it contains peanuts.

Golden Rule for FOH If you cannot guarantee a dish is safe for a guest's allergy, say so honestly. It is far better to lose a sale than to risk a life.
